Quick, Easy, AND Healthy Banana Bread!

Do you have any all brown bananas at your house that literally NO ONE will eat? Or do you just want to eat healthier while eating something delicious? Or do you just want to support my blog and look at cool pictures? Whatever the reason, you have DEFINITELY come to the right place. Let’s begin!

Before you can begin, make sure you have the perfect bananas. You want the bananas that have been sitting in your lunch bag for AGES. You want those bananas that have completely gone mushy and all brown. The more spots, the better. You want those bananas that have been chilling on your counter for so long that you can’t even tell that they were yellow at some point. You DO NOT want a yellow banana. Just think of it this way, the more brown, the riper it is. The riper it is, the sweeter the banana is. The sweeter the banana, the better your banana bread will taste.

(The bananas in the photo below are just for show. You don’t want super unripe bananas lol)

Now that we got that out of the way, let’s ACTUALLY begin.

Ingredients:

  • 1 1/2 cups of mashed VERY RIPE SUPER BROWN BANANAS (see above for more info) This is around 3 to 4 medium sized bananas
  • 1 cup of sugar
  • 1/3 cup of softened butter (or you can struggle for a while, your choice)
  • 2 eggs (at room temperature)
  • 1/3 cup of water
  • 1 2/3 cups of all-purpose flour (NOT SELF RISING!!)
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of baking powder
  • 1/2 cup of chopped nuts (optional)
  • a bit of margarine
  • a small handful of flour

On to the baking!!

  1. First, preheat your oven to 350 degrees Fahrenheit

  2.  Using a paper towel, coat the sides of your loaf tin with margarine. Then take a small handful of flour and sprinkle it around the tin. Move the flour around the tin by tilting and patting the sides until all the margarine is covered in flour.
  3. Mix your softened butter and sugar into a big bowl with a spatula. If you are like me and you do things spontaneously and your butter is not softened, just keep mixing it with the sugar until it is all softened. This is extra work….I do not recommend this.  Just soften your butter in advance.

  • Now is the time to mash your bananas! Peel the bananas and place them into a measuring cup. Mash them until there are no more lumps and then smooth it out to make sure you have 1 1/2 cups of banana. Then add your water on top of the mashed banana! ***PRO TIP!! *** Doing this ensures your banana doesn’t go brown and stays it’s yummy yellow color! (Ideally you want your banana exterior to look like the peels in the photo below)

  • Your butter and sugar mixture should be all softened up at this time, so we’re moving on to the eggs! Your eggs should be at room temperature. If they are not, you can place them in a bowl or container (I used a clean mug) filled with warm water to warm them up faster! Do not use hot water as this will cook the eggs.

    Add each egg to the sugar and butter mixture one by one, mixing thoroughly in between each one!
  • Then add the mashed bananas and water to the mixture of butter and sugar!
  • Then add all remaining ingredients (except the nuts)! Stir until the ingredients are fully incorporated but DO NOT stir too much! If you stir too much, your banana bread will turn out to be hard and dense. After all the other ingredients are incorporated, fold in the (optional) nuts. I personally didn’t because I made this for my family and my brother is VERY allergic to nuts!

  • Pour your batter into your prepared baking tin and smooth it out! Shake the pan a bit to smooth it out.

  • Then place the baking tin into the oven for around 30 minutes. After 30 minutes, rotate the baking tin in the oven and let it bake for another 30 minutes or until you can insert a toothpick and it comes out clean!

  • Remove it from the oven and loosen the sides of loaf from the pan using a knife. Remove the loaf from the pan and allow it to cool before slicing it!

  • This makes for an easy and quick breakfast on busy mornings! Just whack some cream cheese on top and you have a filling breakfast in a flash! This recipe is VERY easy and I highly recommend!
