Quick and Easy Roasted Chickpea Recipe

Hello all!! How you doin’?

I’m just over here…chillin’…..and snacking on the best things I’ve ever created in my life! Okay that may be a liiiiittle extreme but I’m totally serious here people. You. Need. To. Try. These.

And don’t worry, I totally understand the cooking struggle may be real for you.

I understand. I FEEL you. Figuratively not literally lol.

But that’s why I’m here to break it down and make it easy peasy lemon squeezy.

Plus it’s pretty hard to screw these up. I would know. I burn a majority of my toast still.

So as I’m chilling and listening to God’s Plan by Drake, just know that it is totally God’s plan for you to make these. Too much? I thought so.

So here’s what you need to make these awesome, crazy easy, uber healthy, super tasty roasted chickpeas. Also did I mention that they’re HEALTHY?????? AND VEGAN???? Wild I know. Just wild.



Ingredients:  

a can of chickpeas

paprika

cumin

onion powder


And that’s it! Didn’t I tell you it was easy?

Steps: 

  1. Preheat your oven to 400 degrees F
  2. Pour your chickpeas into a colander and rinse them with cold water
  3. Line a baking sheet with tin foil for easy clean up!
  4. Shake your colander to make sure there isn’t too much excess water in the bottom
  5. Pour the chickpeas onto the baking sheet and lay them flat with reasonable space between them. Basically just make sure they aren’t covering each other
  6. Put the chickpeas into the oven for 10 minutes at 400 degrees F
  7. After 10 minutes in the oven, remove the chickpeas and add as much or as little seasoning (paprika, cumin, onion powder) as you would like. Make sure to also stir your chickpeas so both sides get roasted.
  8. Put your now seasoned chickpeas back into the oven for another 10 minutes
  9. After 10 minutes, stir your chickpeas again and put them back into the oven for another 5 minutes
  10. After 5 minutes, remove the chickpeas from the oven and allow them to cool. They should be crispy and if not, feel free to keep them in longer
  11. Put your chickpeas into a bowl and feel free to add more seasoning if you’d like!


And that’s it! Now you have the perfect snack for watching Netflix, writing a blog post, or to take with you to work/school! These chickpeas are perfect to replace chips or other fatty snacks that you may be craving while on your prom/summer bod diet. Plus they’re addicting. They’ll keep you full and keep you happy. But whether you’re dieting or not, just know that I love you either way 🙂
